Great question. Z scroes are used for a few reasons. 1) It can be used to compare scroes measured on different scales. So, if you have a question that use a 5 point rating scale and another that uses a 7 point rating scale, you can convert both scales to z scroes to compare individual scroes of the averages from each scale. 2) If we want to compare the relative standing of each score in a distribution relative to the mean, we compute z scroes. An example of this is standardized test scroes, (Graduate Record Exam (GRE), Law School Admissions Test (LSAT), or when your professor/teacher grades you on a curve).
